I think you beat the game when you:

Have one craft at 100, the rest at 60. Fishing 100 too. Have every job with capped exp at 75. Have capped merits in every category. Have a full set of every HQ abjuration. Have every relic weapon upgraded to 5th stage. Have a full set of AF2 for every job. Have 99,999,999 gil, or whatever the max amount is. You must have completed every quest, every mission, and you must have gotten to chain 100+ in your career. You must be #1 in ballista.

I can't think of anything else cool to add to this.
