Everything about chocobo breeding is still theory. I think the only thing people know much about is the food/stat thing, but that's just because most of the information was provided by S-E.
There is one theory on Chocobo Breeding that I do agree with, though. It's all about inheritence. Chocobos probably have a recessive color gene which can show in either the Adolescent or Adult stage (Just because you see colored tips during the "teen" years, it doesn't guarantee you'll get a colored chocobo).
So if you breed two chocobos with Recessive color genes, you'd have a certain percentage chance of getting a colored chocobo.
